Annapurna School of Cooking
Our healing cuisine has been contributing to our customers’ health to such an extent that we were inundated with requests to share this knowledge. Hence, in July, 2007, the Annapurna School of Ayurvedic Cooking was launched.The philosophy and cooking methods at the restaurant are based on Ayurveda, the most ancient system of Indian medicine. It is therefore appropriate that our cooking school will share this ancient knowledge. Ayurveda emphasizes diet in relation to the physical and psychic make up of the human being, and knowledge of the ingredients being cooked enhances one’s relationship with food, bringing forth its healing aspects. Principles of Ayurveda include the body, the three doshas, the four seasons, the I've elements, the six tastes, the seven chakras, and the nine planets.
Food is influenced by all of these principles; they and their influence are a large part of what is taught at our school. The actual cooking demonstration is just part of what you will learn at the classes. What to eat? When to eat? How? How much? How many times a day? All of these questions will be answered in our classes. Classes include various topics, from kitchari (our ultimate Ayurvedic dish) to gluten free baking. Suggestions for class topics are always welcome.
Annapurna's school of Ayurvedic cooking is located at 2209 Silver Avenue SE Albuquerque, NM 87106 (next to the existing location of Annapurna in Albuquerque). Classes are $45 per class and are held monthly on Saturday mornings from 9am to 12pm.
Beginning July 2013 we will be offering the following two classes. We will take special requests for selected topics we have offered before as long as there is a number in excess of 5 people in the class and will be worked into the schedule around the regular monthly classes.
Introduction to Ayurvedic Cooking – with a kitchari cooking demonstration, other material covered is basics such as rice; dal; vegetable dishes. Daily routine to incorporate Ayurvedic lifestyle is also covered – let’s revive a 5,000 year old lifestyle in this 21st century.
Advanced Ayurvedic Cooking – with cooking demonstration such as chapatis as well as soups. Other material covered is spices and the correct Ayurvedic combinations for your dosha; incorporation of seasonal produce; transitional routine from one season to the next.
